Banana Brioche French Toast Casserole

A simple and delicious french toast casserole topped with bananas and a buttery strudel.

  • 1 16-18 oz loaf brioche bread
  • 6 eggs
  • cup milk
  • ½ cup heavy cream
  • ½ cup sugar
  • 1 tbsp vanilla extract

Strudel Topping

  • ½ cup all-purpose flour
  • ½ cup brown sugar
  • 1 tsp cinnamon
  • ½ cup salted cold butter cut into small pieces
  • 2 whole bananas sliced


  • Maple syrup
  • Whipped cream
  • Berries
  • Powdered sugar
  • Chocolate or caramel sauce


  • Grease a 9 x 13 baking dish with cooking spray.
  • Cut steal brioche bread into 1-inch cubes (see Important Tips section above on how to create dry out your bread). Spread bread cubes in the baking dish.
  • In a large bowl, whisk eggs, heavy cream, milk, sugar, and vanilla together until well incorporated and sugar are dissolved. There may be some streaks of yellow from the eggs, which is ok.
  • Pour egg mixture all over the bread cubes. Gently stir and mix until all bread pieces are coated with the egg mixture. Cover with plastic wrap and place in the fridge overnight or for at least 2 hours.
  • Preheat oven to 350 f. Remove casserole dish from the refrigerator.
  • To make the strudel topping, cut the cold butter into small pieces. Place butter piece and add brown sugar, flour, cinnamon, and salt into a bowl. Mix all ingredients with a dough cutter or fork while smashing and cutting the butter. You will still have lumps of butter, but it will be coated with the flour and sugar mixture. You can make the strudel topping ahead of time too.
  • Slice bananas into thin slices. Add bananas by layering them evenly across the surface of the egg and bread mixture.
  • Spread the strudel topping over the banana layer until the entire surface of the casserole is covered.
  • Bake uncovered for 1 hour until the french toast is golden brown. It will puff and rise while baking.
  • Remove from oven and let it rest for about 10 minutes before slicing and serving.
  • Serve with your favorite french toast toppings.
